Dinner Success!

Last night I made a creamy zucchini sauce for dinner, something new. I wasn't sure how it would go but it's vegan, lite and very versatile. The recipe suggests serving it over pasta, rice or quinoa. Of course I'd never serve it over quinoa unless I want to shit my pants and vomit violently...learned that lesson...twice.  Anyway, (enough about shitting my pants and vomiting) it was DEEEEELICIOUS! And relatively easy. Jim also loved it. I will certainly make it again! 

You will be happy to know that Mom is home! She seems to be adjusting well. (I just checked on her via cameras and she's still sleeping. I know that sounds creepy but it's necessary and it's not like I'm watching her every second of the day.) She's back on her antibiotics (had two doses yesterday) and will see her GP this afternoon. Home health care has been called and Maggie has spoken with one of the nurses. I'd imagine that over the next few days as the antibiotics do their job, Mom will be like she was on Friday when I saw her. I know she's happy to be home in her own comfy condo and with her kitties snuggling. 

Maggie had a big day yesterday getting Mom home, fetching her meds, setting her up with meals and then just visiting to check on her. I hope that over the next few, she'll be able to relax a bit more. Anne is going up Wednesday and I know that will be nice for Mom and Maggie. 

When I got home yesterday, Jim was gone and I found all the dining room chairs in the kitchen. Furniture was askew; recliners in the foyer. But I wasn't mad. Jim had cleaned the living room and dining room carpet. So happy. He's already done the upstairs but won't be able to get to the family room until tomorrow. Today, he's taking my car into Subaru to see what's up with my lighter plug thingy. Hopefully it's just the fuse and not some million dollar repair. I'm driving Jimmy's truck to work which means I'll probably go the back ways. I mean of course I've driven his car plenty, including on the highway but I'm just more comfortable avoiding all that traffic. 

Dinner tonight: I think I'll make mahi mahi. There's a new recipe I want to try. 

Not much else is happening here. I'm excited about the weekend for a couple reasons. 1) I have nothing going on. 2) My plan is to get the guest room TV mounted. I'll take my recumbent bike up there as well. It's currently in the Florida room and I have to drag it into the family room if I want to use it. Jim might want to use it as well and he can't drag it. I also want to get my pilates reformer set up in there but I don't know that I have room. I have to figure that out. Oh, and 3) I have a planned recipe for the weekend I'm excited about. It's a Hungarian lentil vegetable stew. It has a lot of steps and something I don't want to make during the week. Just trying to stay healthy. 

Okay well, I'd best get a move on. I need to warm up Jim's truck too since it's not in the garage and it's cold out there! Happy Tuesday! Later!
