Let's start with the good stuff (well, it's all good): Dad was released from the hospital yesterday evening and is now settled (I hope) in the rehab facility. Becky sent a text late last night (10:45ish), having finally gotten home after his transfer. She said that the staff, so far, seems very attentive and personable. Though his room is small, it is adequate. I would assume that today they'll assess his PT needs and start that right off. Who knows what the timeline is for Dad here but he certainly can't go back to Raeburn. The hope is that once the renovation is complete at the new Raeburn, he'll be able to go there. I hope he's motivated and that this place doesn't take his spirit away. Fingers crossed.
My dinner last night was so good. I was at work perusing Pinterest, trying to find something different when I stumbled upon a chicken kabob recipe: Bang Bang Chicken Skewers. First of all, it was so easy. Second, it was delicious. Third, it can be done on the grill or in the air fryer. Additionally, if you didn't want to do kabobs, you could just grill the whole chicken breast. That being said, I think the smaller bites of chicken make it a better texture (I'm weird about chicken lately). One thing you should know: You may think based on all the "hottness" in the recipe that it would be overwhelmingly spicy. It's not. I didn't curb any of the spice and it was perfect-slightly under my desired spice. I used low fat mayo for the sauce btw. Served with some steamed broccoli and yellow rice. Yummy!So normally when I do my yoga in the morning, the dogs are in the room with me snoozing away under the covers on the daybed. With the temperatures being warmer lately, they've opted NOT to get under the comforter. This morning, as I was doing my "class" and in warrior 2, I glanced over and saw Boo just watching me. I mean, he was really staring at me. I continued on, lowered down into another pose and realized that he wasn't watching me, he was watching the TV. It dawned on me what was happening. See, Kassandra's cat made an appearance in the video I was watching this morning and Boo was enthralled. Seriously, he watched for a solid 5 minutes while the cat was roaming around in front of the camera. I'm pretty sure he never even blinked. It was interesting. Oh, and if you're wondering, Scout, who was sitting there as well, never saw a thing.
Dinner tonight: I'm not sure. I've got hamburgers on the menu as well as a couple more chicken dishes and a one pot meal that looks really good. It's a vegan recipe but I'll probably add some shredded chicken to it. Maybe I'll make that. It's a "Pelau" dish which is essentially a rice based dish with lots of veggies, spices, beans and sometimes meat.
Okay - guess I'd better get a move on. Should be an easy day...it's currently raining but should clear out by this afternoon. Happy Tuesday! Later.
