Total Fail

I was so looking forward to my dinner last night. I mentioned it several times: Hungarian Lentil Stew. I'd had it in my menu plans for a few weeks but for one reason or another, it got pushed until yesterday. I made a delicious loaf of bread to go with it as well. When we got home from Shooters, I got all my ingredients prepped and ready for the instant pot. At around 5:00 or so, I started my meal. I got everything (or so I thought) into the Instant Pot and sat down to watch TV. At one point I went into the kitchen and saw the bay leaves sitting on the counter and realized "Oops...forgot to put those in." No big deal. And then a little while later I went to the kitchen for something, opened the fridge and saw my bowl up cut carrots and celery. I forgot to add it and it was too late to put them in...so my meal was ruined. I was so bummed and maybe a little teary because I fucked up our meal so badly. We had nothing else to eat except leftovers. Jim didn't care he had a sandwich. Sort of ruined the rest of my night and I ended up going to bed after the first half of the Super Bowl. 

I'm going to try to fix my meal from last night when I get home today. I'll probably just nuke the carrots and celery to get them soft and then add them to the stew. I'll try to get it right on the stovetop...guess I can add the bay leaf I forgot to put in. What an epic fail on my part. Oh well. My bread was really good though. 

Two weeks from today, Jim will be getting ready to go back to work!!! He's actually really excited as am I. Hard to believe it's been almost three months. Time flies.

Dad is still in the hospital. I think they're probably shooting for today or tomorrow for release? Not sure. Fingers crossed. 

The weekend was good (with the exception of yesterday). We went to Forno on Saturday for Jimmy's birthday dinner. It was really good but not as good as Rodi, the Italian restaurant in our neighborhood. We really didn't do much else. 

The week should be easy as it's a 4-day week with the kids. We have an inservice on Friday and I'm pretty sure I'll be calling in. We are also off next Monday! Woot! I have a meeting today at 12:45 but I'm not leading it so that's good. Other than that...nothing. I was hoping the weather overnight would possibly give us a day off tomorrow but it seems likely to be mostly rain. Oh well.
