Oh, and so far I'm liking the new host Alison. She and Noel seem to have a good rapport as well.
Speaking of food, my eggplant parmesan was SOOOOOO good last night. It's certainly a process to make it but not too difficult. I was able to do certain steps, like letting the slices release their moisture which takes an hour, while I exercised. The biggest pain in the ass was prepping/breading the slices for the oven because you have to dredge, dip, dredge, one slice at a time. No big deal though. Anyway, it was delicious and I have a ton of leftovers. Looks like I'm not cooking tomorrow.
I'm also not cooking tonight because I'm going out to dinner with Lauren and our former neighbor, Christie. We're going to Shooters at 6:30 and apparently there's a LOT to catch up on with Christie.
So happy it's finally Friday. I say finally but really it was a quick week. If all my weeks went the same way this one did, I wouldn't be mad. It should be an easy day. We're still watching Hamlet in ELA (it's a long movie and probably won't wrap until Monday) and in Gov't we'll continue watching Hamilton.
Did I mention that I recently listened to the book Vanderbilt, by Anderson Cooper? It was so good and so interesting considering his personal connection. After I finished it, I wanted more and then realized that before his mother died in 2019, they "wrote" a book together of their correspondences via email during Gloria's 91st year. (It was after she'd had a pretty serious illness and Anderson wanted to delve into things that she'd never talked about with him regarding her past.) I downloaded it and have been listening to it these last couple days. It's read by both of them and so interesting. Gloria V. had such a vivid memory of her life and hearing everything she went through is amazing. (She's a great reader too.) I highly recommend both books and if you're into audiobooks, I think that's the way to go.
No plans this weekend except to go out to eat at some point.
Okay well, I guess I'd best get a move on. The fog is THICK today which means everybody's going to be slamming on their brakes throughout my ride. That was one good thing about Covid; the highways were so much easier to maneuver.
