I don't know who Herb is but his wine sauce is delicious. Try this. It's simple, yummy and lite.
2 T. butter
2 T. chopped onion
2 T. Chopped parsley
1/2 t. dried oregano
1/2 t. poultry seasoning
1/4 t. dried tarragon
1/4 t. dried marjoram
1/2 c. white wine
1 chicken cut up (I used 2 boneless, skinless breasts for Jim and me)
1/4 c. grated Parmesan
1 t. paprika
1. Preheat oven to 350. In a small saucepan, melt butter over medium heat. Add onion and cook until tender or translucent (about 3-5 minutes). Stir in parsley, oregano, poultry seasoning, tarragon, marjoram and wine. Boil about 5 minutes or until sauce has reduced by about 1/3.
2. Arrange chicken in a shallow baking dish (I used a 8 x 8 glass). Pour herb sauce over chicken. Sprinkle with Parmesan and paprika. I baked my boneless for about 30 minutes or until tender. (the recipe for bone in calls for 45 minutes).
I served this with a delicious long grain wild rice, and green beans. YUMMY!!!

Do you think it would taste okay without the wine? It sounds really good (and easy too!!).
Well, probably not as good since the wine gives it that extra flavor. If you're worried about the alcohol, it all cooks out on the stovetop and in the oven.
