Finally!

I was so excited yesterday because as lunchtime rolled around, the clouds parted and the sky was a brilliant, cloudless blue! I quickly ate lunch, ran upstairs and changed into my bikini. I got my spot all set up on the deck with my "flip timer" set and proceeded to bask. Within 10 minutes, the sky had completely, and I mean COMPLETELY clouded up again. I think it was payback from when I called Mother Nature a fucker last week. Joke was certainly on me!

Today, however, it is finally a gorgeous day. Not a bit of humidity and cool! The sky is unbelievable and I'm ready to soak up some vitamin D. I'll have to, unfortunately wait until the sun hits my deck around 11 but that will give me time to vacuum and then take a lovely bike ride. Normally, I would get all my exercise done in the early morning but with the cool weather, I wanted to wait until after breakfast (around 9:00). I've already done my ab and arm work though so that's good. s

What else? Jim surprised me yesterday. I sent him a text asking him what, from our dinner menu, he wanted for dinner last night. His choices were: Buffalo chicken, pork chops, Salisbury steak, chicken and sausage jambalaya or walnut chicken stir fry. I thought for SURE he'd pick Salisbury steak but alas, he chose the jambalaya! Go figure. It was delicious, by the way. I use turkey kielbasa to cut out some of the cals and really the only bad food in the meal is the rice. It was yummy...and easy.

I realize while cooking yesterday that I was on my last quart of broth (I like to keep several in the freezer) so I quickly whipped up some veggie broth using my handy dandy Instant Pot. I will say, if you haven't made homemade veggie broth with your Instant Pot, you are missing out. It is so easy and flavorful. It is a long process but the pot does all the work. I keep all my veggie scraps in the freezer and just whip them out when need be. Probably worth the cost of the pot alone.

I can't think of anything else to talk about. Oh, I watched the premier of season 2 Big Little Lies...good already. Meryl Streep's character...what a pill. If you haven't watched at all, you need to...it's a great series...it was a great book too and so far, they've done justice to the 2nd season (which didn't have a book to base it on).

And that's all I've got. I need to go check on my boys...I feel like they're up to no good. They keep going in the backyard and I'm worried for the cognitively-challenged chipmunks.

Happy Tuesday! Oh, and in case you're wondering - Jim chose buffalo chicken with broccoli and couscous for dinner tonight. Later!
