Eggtastic!!!

You know when I was opening my gifts this year from Jimmy, I knew to expect some crazy off-the-wall gifts. And of course he didn't disappoint. However, I've gotten much use out of nearly everything! (I haven't planted my Chia herbs yet but I'm sure they'll be awesome.) The most amazing of these "As seen on TV" gifts, however, has been the ceramic microwave egg cooker he got me. It makes fluffy perfect eggs in about 1 minute. I mean, I get up at 5:00 in the morning shower and dress, come down crack an egg mix it up with my preferred ingredients, pop it in the microwave and I'm sitting down eating my breakfast by 5:30. Oh, and in mixing my egg, I get to use my handy dandy whisk that Jim got me as well. It's a marvel! You're all jealous, I know.

Lets see...what else do I have? This week hasn't been long but when the alarm went off today it took me a minute to realize that it wasn't Friday and I have to say I was a bit bummed out. Ready for the weekend, I'll tell you that and not just because I can drink tomorrow.

Bonus - Monday is a work day so no kids! And then the following Monday is MLK day - no school! WOOT WOOT!!!

I made a delicious side dish last night! Roasted brussel sprouts and butternut squash with cranberries and a dijon vinaigrette dressing. That's pretty much all I ate for dinner. I had a bit of chicken but not much and the couscous I made wasn't to my liking so I ditched it. I was quite satisfied.
